Carbon steel pans are the best and healthiest non-stick pan that you can use. It comes unseasoned but becomes seasoned to a nice dark color after cooking about 3 dishes with oil.
Unlike cast iron, it can be washed with hot water and soap as long as it is dried immediately afterward (just put it back on a hot stove or kitchen range to dry) and then coated with oil.
